Zucchini Cakes

2 small zucchini
2 green onions
2 eggs or egg whites
Salt and pepper
Olive oil

Shred up zucchini, slice onion thinly, and mix with eggs. Season with salt and pepper and drop them into a hot skillet with a couple tablespoons of olive oil. Cook a couple minutes on each side. Flip once. If you flip too soon they will fall apart. Place them on a cooling rack to cool for a few minutes before eating.

Taco Salad

I will post pics next time I make this. One of my favorites. It's a variation of a Rachel Ray recipe

Ground turkey
Container of sliced mushrooms
2 jalapeños seeds removed diced small
2 medium sweet onions
2 avocados
4 limes juiced
Cumin
Salt
Pepper
Spinach
Chopped purple cabbage
Salsa

Slice up onions into strips, cube avocados and top with lime juice and mix together and set in the fridge. Brown The ground turkey and jalapeños. Season with cumin and set aside. Sauté mushrooms and then add the turkey back to the pan. Cook together until everything is re heated. Season with salt and pepper. Serve spinach topped with turkey and mushroom mix, top with the onion avocado mix and then with the cabbage. You can also use salsa if you like. :)

Dance party

My kids love this. We do it at lease a few times a day.

Rules: turn on a fun song say dance party and everyone has to stop what they are doing and come dance crazy for the whole song. It's a fun way to get some energy out and have fun!!!

Sweet Potato Fries

Ingredients

Sweet potatoes or yams
Olive oil
Salt and pepper

Peel sweet potatoes and cut them up in strips, lay them on a baking sheet drizzle with olive oil and season with salt and pepper mix them around, spread into a single layer and roast at 400• for 20 minutes flip them and continue roasting until the darken maybe 20 minutes longer more for crispy fries. If they get a little burnt thats ok. They will be even better :)

My last before and after picture so far. This was a few months ago.

This is the most recent before and after picture I have as of right now.  I started out right at 300 pounds and as of yesterday I weighed in at 167!

Turkey and Veggie Chili

Turkey and Veggie Chili

Ingredients:
1 lb ground turkey
2 medium onions
3 stalks celery
1 large can whole tomatoes
1 large can of tomato sauce
1 pack of whole mushrooms
4 small zucchini
2 bell peppers
2 jalapeños or red Fresno chilies would also be good
Olive oil
Ground cumin
Chili powder
Cayenne powder
Salt and pepper

I cooked mine on the stove top but it is also great in a crock pot ( mine broke )

First I added the whole can of tomatoes, juice and all to a large pot as well as the tomato sauce and turned the heat to medium.  Next I browned the ground turkey, seasoned it with cumin, chili powder, cayenne, and pepper then put that in the big pot.  In batches I sautéed all the veggies in olive oil. I used some amazing garlic and basil olive oil that I got from the Temecula Olive Oil Company, which I highly recommend. On e veggies are tender but still crisp I threw them in the pot as well. You can cut the veggies as big or as small as you like. I like to leave the mushrooms whole because me and my husband love them but the kids, not so much so they can pick them out. Also depending on the amount of heat you want you can either leave the seeds in the jalapeños for hotter or remove them for mild. Add everything bring to a boil, then turn the heat to low and allow to simmer about an hour or so. After its done season with all seasonings and salt and pepper according to your taste. This would be great topped with some chopped green onions or cilantro. I hope this isn't confusing I am not use to writing my recipes down. =)

Getting things started

I decided that it would be a good idea for me to start a blog and share my progress and inspiration through my road to getting healthy. I wish I would have done this sooner so I would have more of my stuff documented. I am going to try to post every day but we will see how that goes. I'm sure most of you reading this know me so you have an idea what I have been doing lately. I will be posting some of my favorite recipes very soon! I hope you guys like them. =)
