Zucchini Cakes
2 small zucchini
2 green onions
2 eggs or egg whites
Salt and pepper
Olive oil
Shred up zucchini, slice onion thinly, and mix with eggs. Season with salt and pepper and drop them into a hot skillet with a couple tablespoons of olive oil. Cook a couple minutes on each side. Flip once. If you flip too soon they will fall apart. Place them on a cooling rack to cool for a few minutes before eating.

Taco Salad
I will post pics next time I make this. One of my favorites. It's a variation of a Rachel Ray recipe
Ground turkey
Container of sliced mushrooms
2 jalapeños seeds removed diced small
2 medium sweet onions
2 avocados
4 limes juiced
Cumin
Salt
Pepper
Spinach
Chopped purple cabbage
Salsa
Slice up onions into strips, cube avocados and top with lime juice and mix together and set in the fridge. Brown The ground turkey and jalapeños. Season with cumin and set aside. Sauté mushrooms and then add the turkey back to the pan. Cook together until everything is re heated. Season with salt and pepper. Serve spinach topped with turkey and mushroom mix, top with the onion avocado mix and then with the cabbage. You can also use salsa if you like. :)
